Zucchini Muffins
Ingredients
3 Eggs
1 Cup Vegetable Oil
2 Teaspoons Vanilla
3 Cups Pastry Flour
2 Cups sugar or 1 Cup of raw honey
1 Teaspoon Sea Salt
1 Teaspoon Baking Soda
1 Teaspoon Cinnamon
1 Teaspoon Baking Powder
1/2 Cup coconut
3 Cups zucchini (unpeeled and grated)
1 Cup of Nuts (Optional)
(You may add Cocoa powder & omit Cinnamon for a chocolate muffin!)
- Mix all ingredients and bake for a half hour at 325, until lightly brown and tests done with toothpick.
